Books I have completed reading since January 2021:

Kuih Bengka/ White Rice Cake

I love eating this kuih/ snack.

200g rice flour
100g green pea flour
2.3 litres coconut milk
300g sugar
3/4 tsp salt
3 pandan leaves, knotted

1. Lightly grease a 23cm square baking tray and preheat oven to 180C.

2. Combine rice flour with green pea flour and coconut milk in a mixing bowl. Strain the mixture into a non-stick saucepan. Stir in sugar and salt and add the pandan leaves.

3. Cook and stir continuously over low heat for 5-6 minutes until batter is smooth. Remove the pandan leaves.

4. Transfer the mixture to the prepared baking tray. Bake the kuih for an hour or until the surface is dark brown. Halfway through, turn the tray round for even baking.

5. Cool the kuih completely before cutting into slices.

Note = Apparently I heard there's grade of green pea flour. If your kuih doesn't have good texture or it just look weird, it could be the rice or the green pea flour. My friend was telling me that the best green pea flour can be found in Penang, Malaysia.

But don't let this hinder u! Trust me. This kuih is absolutely good.

Actually, I was thinking of joining Hello! Project. It's a Japanese artist production-ish, if you don't know~ I don't think I would be famous in M'sia. O.o! x3 Anyways, since you took vocal lessons.... Is the class tough? How does it feel like being in the class? >.< **inexperience in taking lessons xD**
