Click me Friends and Enemies | Lemon Delicious Pudding Friday, April 25, 2008 Preparation time: 1 hour 30 min Serves 6-10 Ingredients 40g butter 160g castor (superfine) sugar 5 egg yolks 1 lemon, grated for zest 225ml milk 25ml lemon juice 5 egg whites 1/2 tsp snow powder Sieved 20g plain (all-purpose) flour 3 tbsp cornflour (cornstarch) 1/4 tsp baking powder 1. Greased and sugar 6-10 espresso cups and set aside. Preheat oven to 150 C. 2. Cream butter and 150g of sugar in a mixing bowl and add egg yolks, one by one.Add lemon zest and mix evenly. 3. Fold in sieved ingredients, alternating with milk and lemon juice. Mix well. 4. Whish egg whites and remaining sugar in a separate bowl till stiff. Fold into flour mixture lightly. 5. Pour into prepared espresso cups and bake in a bain-marie for 30 minutes. Remove from oven. 6. Dust with snow powder and serve warm.
